Lent-Burden Farming, located in California's San Joaquin Valley, bases the future quality of its crops on what's below the surface. General partner Mike Burden is a big believer in letting the soil dictate, at least to a reasonable degree, what crop he plants. Because of this, he feels it's important to diversify crops, both to be flexible and to remain profitable. For example, while in recent years when grapes weren't doing so hot, almonds, and to a lesser degree walnuts, picked up the slack.
